Ingredients

  • 1 can (15 oz) black soybeans, drained and rinsed

  • 3 large eggs

  • 1/4 cup coconut oil or melted butter

  • 1/4 cup cocoa powder (unsweetened)

  • 1/2 cup keto-friendly sweetener (like erythritol or monk fruit)

  • 1 tsp vanilla extract

  • 1/4 tsp salt

  • 1/2 tsp baking powder

  • 1/2 cup dark chocolate chips (sugar-free)

Preparation

  • Instructions:

    1. Blend the Soybeans: In a blender or food processor, blend the black soybeans with cocoa powder, sweetener, vanilla extract, and a pinch of salt until very smooth.

    2. Whip the Cream: In a separate bowl, whip the heavy cream until stiff peaks form.

    3. Fold Ingredients Together: Gently fold the whipped cream into the black soybean mixture. Mix until it’s fully combined and creamy.

    4. Chill: Spoon the mousse into serving bowls and refrigerate for at least an hour to let it set and chill.
