Ingredients
1 can (15 oz) black soybeans, drained and rinsed
3 large eggs
1/4 cup coconut oil or melted butter
1/4 cup cocoa powder (unsweetened)
1/2 cup keto-friendly sweetener (like erythritol or monk fruit)
1 tsp vanilla extract
1/4 tsp salt
1/2 tsp baking powder
1/2 cup dark chocolate chips (sugar-free)
Preparation
Instructions:
Blend the Soybeans: In a blender or food processor, blend the black soybeans with cocoa powder, sweetener, vanilla extract, and a pinch of salt until very smooth.
Whip the Cream: In a separate bowl, whip the heavy cream until stiff peaks form.
Fold Ingredients Together: Gently fold the whipped cream into the black soybean mixture. Mix until it’s fully combined and creamy.
Chill: Spoon the mousse into serving bowls and refrigerate for at least an hour to let it set and chill.
Serve: Garnish with sugar-free dark chocolate shavings or a sprinkle of cocoa powder, if desired.
